Modern frying pans may differ in type (regular, for pancakes, grill and others), material of manufacture, size and other characteristics. But in the presence of a non-stick coating, it is it that determines the main features of handling dishes, regardless of the main material of manufacture.

Teflon and the Guinness Book of Records

Everything you cook in a Teflon frying pan literally slides on it — it's true. Teflon coating is even listed in the Guinness Book of Records as the most sliding. Nothing burns on such a pan, you can cook without adding oil and fat. In addition, Teflon pans are very light and just as easy to clean.

You can cook in a Teflon frying pan without adding oil

However, we used to call all such frying pans "Teflon", despite the fact that "Teflon" is a registered trademark of a separate company. Different manufacturers may call this coating in their own way. Teflon itself is a common name for a non—stick coating made of polytetrafluoroethylene (PTFE) polymer material.

It is often possible to find statements that Teflon releases carcinogens and such dishes are harmful. Firstly, you should not buy frying pans from unknown manufacturers who do not have a certificate of product quality. Secondly, Teflon can emit dangerous substances only if you mercilessly overheat the pan. That is, you can be calm, observing the simple rules of operation.

Cook dishes that do not require maximum frying pan heating and do not worry about anything. For a steak, for example, you will have to choose a frying pan with a different coating. As for everything else — no complaints.

Depending on the frequency of use, change the Teflon-coated pan at least once every 1.5-2 years. Over time, Teflon wears out, if the coating is damaged, then it is better to change the pan immediately.

Hence the third rule — to avoid scratches and other troubles, forget about metal blades, forks and spoons. Teflon and metal are the worst enemies.

Anyway, Teflon remains one of the most popular coatings. But the main thing is to choose the right frying pan and use it correctly. When buying a Teflon frying pan, pay attention to the thickness of the bottom and walls — it should be at least 5 mm. And you should not be led to cheap Chinese-made frying pans. Let it be one, but high-quality and sound.

Why is ceramics better?

The ceramic coating is notable for its scratch resistance
and harmlessness even when such appear

The main competitor of Teflon is ceramics. Ceramic pans, although they did not displace the rest of the non-stick representatives from the kitchens, but at least gave them the opportunity to choose. At the same time, the ceramic surface is still inferior to Teflon in terms of non-stick properties. And it is desirable to cook on it with the addition of a small amount of oil.

Undoubtedly, the advantage of ceramic coating is that such pans are not afraid of high temperatures (they can withstand up to 450 degrees without any side effects), they heat up quickly and evenly. The dishes in them do not burn and are obtained with a crispy crust.

As for all the other qualities, ceramics are on top here. This coating is environmentally friendly, much more resistant to scratches, and therefore it has a longer life span. In addition, ceramic-coated pans are easy to clean. The only thing ceramics doesn't like is bumps and sudden temperature changes. If you decide to rinse a hot frying pan with cold water, be prepared for the fact that it will be covered with microcracks. The coating will not deteriorate with lightning speed, but the damage will be done. And when the pan falls, chips may appear on the coating.

Marble coating: non-stick and beautiful

Marble coating easily withstands high temperatures
and easy to clean

The third representative of non-stick. Marble-coated pans have appeared relatively recently, but have already proven themselves. The essence of this non-stick coating is that marble chips are added to it, processed in a special way, which makes it stronger.

However, do not expect miracles from such a frying pan. Marble coating, or Marble Coating, makes it in the first place... beautiful! In addition to the decorative effect, such pans, unfortunately, do not have any special uniqueness.

Yes, they also have non-stick properties. The coating easily withstands high temperatures and is easy to clean. And this, in principle, is quite enough to get not only a high-quality, but also a beautiful frying pan. The main thing to remember is that the marble coating is prone to scratches (as in the case of Teflon — forget about metal blades, forks and spoons) and does not like sudden temperature changes.

When choosing a pan with a marble coating, pay attention to the thickness of the bottom and walls: the bottom should be thick enough, at least 6 mm, and the walls — at least 3.5 mm. Such a frying pan, with proper care and use, will last you a very long time.
