The key difference is that when the knob does not need to be moved (for example, after hours or if the burner is already in the desired mode), it can be recessed into the control panel so that there are no extra protruding parts on it. This provides a pleasant appearance, and it is also easier to clean such a cooker — dirt does not accumulate on the knobs and, when recessed, they do not interfere with wiping the surface of the control panel.
